Avaraikkai mezhupuratti


Avaraikai mezhupuratti is a traditional healthy , fiber rich south indian stir fry made with shallots,garlic , curry leaves and mild spices .This mezhupuratti goes well with rice , chapati etc

Ingredients 
Avarkai- 15 nos (finely chopped)
Shallots -7 nos (crushed )
Garlic -3 clove (crushed)
Chilli flakes - according to taste 
Curry leaves - 1 sprig
Mustard- 1/2 tsp
Salt - as required 
Oil -2 tsp 

How to make 
  1. Wash and finely chop the avaraikai 
  2. Heat oil in a pan .Add mustard seeds, allow them to splutter 
  3. Now add the curry leaves, crushed shallots and garlic .Saute then for about 2 min
  4. Add chopped avaraikai and salt .Mix well
  5. Cover and cook on low flame until the beans turn soft 
  6. Now add chilli flakes and cook it uncovered 
  7. Stir it continuously until the beans turn dry 
  8. Switch off the flame and serve hot with rice or chapati
