Avaraikai mezhupuratti is a traditional healthy , fiber rich south indian stir fry made with shallots,garlic , curry leaves and mild spices .This mezhupuratti goes well with rice , chapati etc

Ingredients
Avarkai- 15 nos (finely chopped)
Shallots -7 nos (crushed )
Garlic -3 clove (crushed)
Chilli flakes - according to taste
Curry leaves - 1 sprig
Mustard- 1/2 tsp
Salt - as required
Oil -2 tsp
How to make
- Wash and finely chop the avaraikai
- Heat oil in a pan .Add mustard seeds, allow them to splutter
- Now add the curry leaves, crushed shallots and garlic .Saute then for about 2 min
- Add chopped avaraikai and salt .Mix well
- Cover and cook on low flame until the beans turn soft
- Now add chilli flakes and cook it uncovered
- Stir it continuously until the beans turn dry
- Switch off the flame and serve hot with rice or chapati
