Ingredients
Long beans/Achinga payar -250 g
Grated coconut -1/2 cup
Shallots -3 (sliced)
Green chilli -1
Turmeric powder -1/4 tsp
Mustard seeds-1/2 tsp
Dried red chilli -1
Jeera -1/4 tsp
Garlic -1 clove
Curry leaves -1 sprig
Coconut oil -1 tbsp
Salt to taste
How to make
- Heat oil in a pan
- Add mustard seeds.When they start to splutter ,add the dried red chilli and curry leaves.Saute it
- Add the chopped long beans ( should be smaller than done for Achinga payar mezhukkupuratti).Stir well
- Sprinkle 1 tbsp of water , cover and cook on low heat for 10 min
- In a mixie jar add the grated coconut, shallots, garlic , jeera,green chilli , turmeric and a little salt.Pulse it twice till it's crushed
- Now add the coconut mixture, check for salt and stir fry it for 2 to 3 min till it's combined and the moisture is evaporated
- Serve hot with rice
Notes
Coconut can be reduced to 1/4 cup and sliced coconut can be added
