Long beans thoran /achinga payar thoran kerala style



Achinga payar thoran is a simple kerala style thoran made with long beans, coconut and very mild spices .Myself and my husband loves to have this thoran with chapathi.Its a fibre rich thoran with full of Kerala flavours

Ingredients 
Long beans/Achinga payar -250 g
Grated coconut -1/2 cup
Shallots -3 (sliced)
Green chilli -1
Turmeric powder -1/4 tsp
Mustard seeds-1/2 tsp
Dried red chilli -1
Jeera -1/4 tsp
Garlic -1 clove 
Curry leaves -1 sprig 
Coconut oil -1 tbsp
Salt to taste 

How to make
  1. Heat oil in a pan 
  2. Add mustard seeds.When they start to splutter ,add the dried red chilli and curry leaves.Saute it
  3. Add the chopped long beans ( should be smaller than done for Achinga payar mezhukkupuratti).Stir well
  4. Sprinkle 1 tbsp of water , cover and cook on low heat for 10 min 
  5. In a mixie jar add the grated coconut, shallots, garlic , jeera,green chilli , turmeric and a little salt.Pulse it twice till it's crushed 
  6. Now add the coconut mixture, check for salt and stir fry it for 2 to 3 min till it's combined and the moisture is evaporated 
  7. Serve hot with rice  

Notes 
Coconut can be reduced to 1/4 cup and sliced coconut can be added
