Puttu (Steamed Rice Cake)
Makes -3
Ingredients:
Rice flour – 1½ cups (preferably roasted puttu flour)
Salt – a pinch
Grated coconut – 2 tbsp (fresh or frozen)
Water – as needed (approx. ½ to ¾ cup)
Instructions:
Preparing the flour
In a mixing bowl, add the rice flour and a pinch of salt.
Sprinkle water little by little and mix the flour with your fingers until it reaches a moist, crumbly texture.
The right consistency is when you press a bit of the flour in your fist—it should hold shape but crumble easily when touched.
Layer with coconut:
In a puttu maker, add 1 tbsp of grated coconut at the bottom.
Then add a layer of the moist rice flour (about 2–3 tbsp), followed by another thin layer of coconut.
Repeat until the puttu cylinder is full, ending with coconut.
Steam the puttu:
Attach the puttu maker to a pressure cooker or pot with boiling water.Here i have done it using a cherata puttu maker
Steam for about 6–8 minutes or until you see steam escaping from the top and the puttu is cooked through.
Serve:
Gently push the steamed puttu out of the cylinder using a stick or spoon.
Serve hot with banana, sugar, or curry (like kadala curry or green gram curry).
