Kalathappam recipe /Traditional kerala sweet rice cake with jaggery


Kalathappam is a traditional healthy kerala snack made from rice  , coconut , jaggery and mild spices.Made with the ingredients available at home , this is a traditional desert  perfect for tea time


Ingredients 
Raw rice -1 cup
Cooked rice -1/4 cup
Jaggery -1 cup +1 tbsp
Water -1/2 +1/2 cup
Cardamom powder -1/4 tsp
Cumin -1/2 tsp
Small onion -1/4 cup 
Coconut pieces -1/4 cup
Baking soda -1/4 tsp
Coconut oil -3 tbsp
Salt -1/8 tsp

How to make
  1. Wash and soak rice for 4 hours 
  2. In a mixie jar add the soaked rice , cooked rice , cardamom powder, cumin , salt and 1/2 cup water .Grind it to a very smooth batter
  3. In another pan ,add the jaggery and 1/2 cup water, melt it .Strain to remove impurities present .Allow it to cool slightly 
  4. Once it has cooled a bit add it to the prepared batter
  5. Take a thick bottomed pan and heat it. Add 3 tbsp of coconut oil and heat it . Fry the coconut pieces till it turns golden. Once done remove from the pan and keep aside
  6. To the batter add fried coconut  and add baking soda just before cooking. Mix gently
  7. To cook kalathappam , grease a heavy bottomed pan or cooker or nonstick pan with coconut oil
  8. Pour the batter evenly , sprinkle fried onions evenly on the top .Cover with a tight lid and cook on the lowest flame for 30 to 40 minutes.
  9. After 30 minutes check whether the centre is cooked and kalathappam start to leave the sides
  10. Allow it  to cool before cutting it into pieces

Notes 
  • you can place a heavy tawa under the pan to avoid burning
  • The process should be done very quick .
  • Measurement should be accurate
